Patty's Chocolate Turtles

Ingredients:
•    30 Caramels (about ½ pound)
•    2 tablespoons heavy cream
•    1 pound Chocolate melts
•    Whole pecans

To Start:
•    Line jelly pan with a Silpat mat or parchment paper
•    Melt chocolate in a glass bowl in microwave, stirring every 30 seconds. (melt chocolate in small batches at a time)
•    Melt caramel with 2 tablespoons of heavy cream in microwave

Assemble:
Place a tablespoon of chocolate forming a 1 inch diameter circle on the Silpat mat. Repeat 12 times spacing evenly. (tip: I usually form 6 circles at a time and place pecans on the chocolate  - see next step – to avoid chocolate from hardening.)

 Place 5 pecans on the chocolate circles.  
•    Place a pecan at 12 o’clock for the head
•    Place a pecan at 3 o’clock and 9 o’clock for the arms.
•    Place a pecan at five o’clock and seven o’clock for the feet.

Place a tablespoon of melted caramel on top of the chocolate and pecans.

Cover the caramel with a tablespoon of melted chocolate

Place in the freezer for a few minutes until the chocolate turtles harden.

Note:
•    Use leftover broken pecan to make turtle squares.
•    Layer the following: melted chocolate, melted caramel, broken pecans and chocolate.
•    Place in freezer for about 5 minutes until the chocolate hardens
