White Corn, Avocado and Black Bean Salsa
Ingredients:
• 2 cans or fresh small white corn
• 1 can of black beans
• 1-2 avocados
• 1 whole bunch of green onion - scallions
• Crumbled feta cheese
• 1/3 cup apple cider vinegar
• 1/3 cup olive oil
• 1/3 cup of sugar or splenda
• 1 bag Scoops Tostitos Tortilla chips
Drain corn and black beans in a strainer and rinse with water. Put in a bowl.
Chop onion using both the green and white part of the scallions.
Dice avocados into small cubes.
Mix apple cider vinegar, olive oil and splenda together.
Add onions avocado and olive oil mixture to corn and black beans.
Sprinkle and toss with Feta Cheese.
Serve with Tortilla chips -scoops kind.
